Vegan Lentil Soup

Why You’ll Love This Vegan Lentil Soup Recipe:

Our vegan lentil soup recipe has been a favorite during our 5 day health retreat. We shared this recipe during one of our diabesity seminars, and one person told us recently that it has become a regular dish in her home. Besides taste, people like this recipe because it takes little preparation.

Vegan Lentil Soup Instructions:

1 1/2 cups lentils
8 cups water
1/2 cup brown rice
1 cup diced onions
2 Tbsp. lemon juice
1 Tbsp. onion powder
1 Tbsp. salt
1 Tbsp. Chicken-Like Seasoning
1 tsp. garlic powder
1 tsp. dill weed
2 tsp. cumin
1 cup frozen chopped spinach
15 ounces can diced tomatoes

Place all ingredients in kettle except spinach and tomatoes. Bring to a boil, reduce heat, and simmer for one hour or until lentils are tender. Add spinach and simmer one min. Add the tomatoes just before serving. Makes 10 cups.

Minimal Effort Required

As you can see, this recipe doesn’t take much effort to make. It simply frees up your time to do other useful activities while still allowing you to have tasty, healthy meals for you and your family. Since it makes ten cups, depending your your family size, you probably will be able to serve leftovers of the soup the next day, which will help make your food preparation even easier.
