A Carrot Macaroon Recipe From Our Ohio Trip

From March 27th to April 2nd, Wellness Secrets had a wonderful time giving nutrition lectures and plant based cooking classes at the Swanton Seventh-day Adventist church. A total of 60 people came out to at least one night of our presentations. We had an average of 35 to 40 people a night from the local church, other churches in the area, and people in the community. We were very thankful for Don and Carol Graber’s, former health guests, footwork in advertising and helping with our meetings!

Carrot Macaroons

1 c. grated raw carrots, packed
1/2 c. water
1/4 c. honey
1 tsp. vanilla
1 1/2 c. coconut
1 c. oat flour
1/2 tsp. salt

Make oat flour by blending oats. Mix all ingredients. Let sit few minutes. Firmly pack dough into a moistened tablespoon or small scoop, and drop on sprayed cookie sheets. Bake at 325F for 20 minutes.
